Somewhere Soft comes from Guatemala, from the mountains of Huehuetenango. It's the story of two hands fermenting for 32 hours with full attention — Don Pedro Lopez Mendez and his wife.

GuatemalaDeep in the heart of Huehuetenango, high up in the mountains of Finca los Naranjos, part of the cooperative Comal, Don Pedro Lopez Mendez (82) has been working here with his wife for decades on their 1.3-hectare farm. The secret to the flavour of this coffee lies in the fermentation, which lasts between 25 and 32 hours. Don Pedro has developed an eye and a feel for knowing when the fermentation is just right. It’s his passion and pursuit of perfection in the fermentation that give this coffee its intense, round chocolate flavour.
